Parsnip ‘Guernsey’ (Pastinaca sativa) is an old and valued variety, also known as Hollow Crown. It forms large, white and aromatic roots that are well suited for soups, stews and flavouring stocks.
Sow the seeds directly outdoors in rows from early spring to early summer. Thin the seedlings if needed to give the roots enough space to develop. This variety is also suitable for storage when harvested in autumn.
